Josephine is a dark, multi-faceted beer aged in cognac barrels. The first sip opens with aromas of mocha, black currant, and anise. Flavor notes of oak, vanilla, and honey follow, giving way to a clean, dry finish. We brew this beer with 2-row, Midnight wheat, raw wheat, and rye malt. It’s hopped with a blend of Perle, Glacier, and Simcoe hops. We then add our house strain of Brettanomyces yeast. After four months of aging in a stainless steel tank, we transfer Josephine to cognac barrels where it ages for an additional year. 10.4% ABV.
