A slightly tart Saison brewed with Pennsylvania buckwheat brought down from the folks at Free Will Brewing Co. (Bucks County, PA). We used a combination of our house yeast for the primary and the Free Will house for secondary to produce a nice hazy funk. This beer was fermented in stainless and dry hopped with Wai-Iti before Foedre aging for 8+ months. Notes of pineapple are balanced out by a nice malty backbone. 5.9% ABV.
