Our continuing experiments with our flagship IPA, Neon Gypsy, lead to this unlikely combination of IPA grain and hop bills fermented with Saison yeast. The resulting beer is medium-bodied and pale amber in color with a crisp mouthfeel, and moderately strong 7.3% ABV. Grapefruit, citrus, and pine combine with the dusty, peppery character of Saison yeast for a hybrid that is truly the best of both brews.
